What we know about this cookbook comes from the title page, which reads “Recipes for cooked dishes prepared for the use of Doña Maria Josefa de la Luz Tapia, 1816.” Likely recorded in Mexico, the recipes contained inside include chiles rellenos a los poblanos, mole oaxaqueño, albondigas, frijoles, bueñuelos, leche quemada, chicharrones, and more. One of the finest examples of manuscript cookbooks in our collection, no additional information has been found regarding Doña Maria, and translation of the text would require dedication and skill, but there is a good chance that contained among the recipes are details of the personal lives of the owner(s).

This collection contains various manuscript and typescript volumes of recipes written in Spanish. Included are "recetas de Elvira Ponce de Marquez, Mexico, 1933”, “libreta de cocina perteneciente a Enedina Tortolero, 1956", and two unidentified volumes written in both English and Spanish that include a recipe for "pork chops southern". Also included is a volume entitled "Socorro Aceves de Clever Cocina" written in small cursive that contains recipes for German foods, or "recetas alemanas."
