What we know about this cookbook comes from the title page, which reads “Recipes for cooked dishes prepared for the use ofDoñaMaria JosefadelaLuzTapia, 1816. Likely recorded in Mexico, the recipes contained inside include chiles rellenos a los poblanos, mole oaxaqueño, albondigas, frijoles, bueñuelos, leche quemada, chicharrones, and more. One of the finest examples of manuscript cookbooks in our collection, no additional information has been found regarding DoñaMaria, and translation of the text would require dedication and skill, but there is a good chance that contained among the recipes are details of the personal lives of the owner(s).
